For Betsy Soltysiak, baking began long before BitesbyBetsy ever had a name.

It started in her grandmother’s kitchen, where a young Betsy would stand on a chair to crack eggs and take part in the family tradition of creating something from scratch. Years later, that childhood experience has become the foundation of a home bakery built around family recipes, creativity, and the belief that the right dessert can make an occasion even more memorable.

“I have been baking since I was a child, standing on a chair to crack eggs in my grandmother’s kitchen,” Betsy shares. “Creating unique desserts has been a part of my life for as long as I can remember.”

Today, Betsy is the owner of BitesbyBetsy, a home bakery she has operated for six years. The business specializes in 9-inch and 4-inch cheesecakes, along with cheesecake bars and bites, offered in a variety of fresh flavors. In addition to her signature cheesecakes, Betsy also creates a scrumptious variety of cookies, brownies, and candy, giving customers plenty of delicious options for gifting, celebrations, client appreciation, and everyday treats.

But what makes each dessert distinctive is not simply what goes into it. It’s where the recipes come from.

BitesbyBetsy is built around a collection of family recipes, many of which have been passed down through generations. Betsy adds her own personal twist, creating desserts that honor tradition while still offering something uniquely her own.

“BitesbyBetsy desserts are a combination of unique family recipes along with my own personal twist!” she says. “Most of our recipes have been in our families for generations!”

One of the most meaningful influences behind the business came from Betsy’s father-in-law, a restaurant owner in St. Louis. He shared his special cheesecake recipe with her, a recipe passed down from his Sicilian grandmother.

That connection helped inspire Betsy to turn her lifelong love of baking into a business. Her family remains central to the process, with nearly everything she creates originating from a family recipe.

The result is a business where every bite carries a little bit of history.
